EASY KALE SALAD

And just like that I’m back! This blog took a lil break to learn about more social issues and create more yummy recipes! Like this absolutely delicious salad! Crunchy kale plays nice with smooth and creamy tahini dressing. Crunch comes in with smokey chickpeas and garlicky croutons. The salty shaving of parm adds some lovely chew too. I kept it light and fresh with tons of herbs added in a lil lemon on the side!

INGREDIENTS LIST:

  • half a bag of prerinsed kale

  • 1 lemon cut in half

  • 1/4 thinly sliced red cabbage

  • handful of cilantro

  • handful of flat leaf parsley

  • 1/4 shaved Parmesan cheese

  • half can of chickpeas

  • 1/2 teaspoon of smoked paprkia

  • 3 Tbs. tahini

  • 2 Tbs. olive oil

  • 1/2 package of tuna packed in water (optional)

“Recipe”

  1. add kale into a bowl with a splash of olive oil and some salt and pepper. Massage until glossy

  2. heat up a cast iron skillet until smokin hot and then add it rinsed and drained chickpeas.

  3. cook for around 5-7 minutes until chickpeas are crispy. Turn off the heat and add in a pinch of salt and the smoked paprika.

  4. in a separate bowl mix together tahini, the rest of the lemon, the rest of the olive oil with salt and pepper. ( I also add 1-2 tablespoons of water to get the dressing going)

  5. to the kale add on some croutons, the shaved parm, the cabbage, the chickpeas, the tuna, and then drizzle on the dressing!

    There you have it! 10 minutes and you’ve got an easy meal prep friendly lunch!
