AVO TOAST
Avocado Toast is simply delicious. But I always wonder why we stop short. Toast with some avocado on top is a few ingredients shy from BURSTING with flavor! So while I am aware this recipe is not difficult or ingenious I wanted to show you something I found out long ago. Restaurant brunch food is so overpriced you can make a meal and drink it with champagne faster and cheaper than you could in ANY restaurant. Here how I made this “recipe”
INGREDIENTS:
1 large piece of Sourdough bread
1 medium piece of avocado
1 roma tomato
1/2 cup spinach
2 pieces of thick cut bacon
2 eggs
1/2 tsp chili flakes
1 tsp everything bagel seasoning
salt and pepp to taste
RECIPE:
In a medium size skillet fry up the bacon. (to encourage less popping let your pan heat up with your bacon already in it!)
In the meantimes sauce your tomato and wash your spinach
When the bacon is done, drain the grease and rinse out the pan
Add in about a 2 tablespoon of olive oil and let the pan get smoking hot
While the pan is heating up go ahead and get your toast nice and crunchy golden toasty.
Add in your eggs to the smoking hot pan and let them cook and way you want. (I love a sunnyside up queen so I let them cook until the edges are lacy golden deliciousness and the yolk is runny. Feel free to flip and smash with your spatula if runny yolks have you runnin for the hills)
Cut in half and mash avocado in its skin with a fork
ASSEMBLE- this is the order I made my delicious breakfast in
toast
avo
salt and pepp
spinach
tomato
bacon
egg
chili flakes, salt and pepp, bagel seasoning
FIN!
