KIMCHI FRIED RICE
Kimchi fried rice is hands down one of my favorite meals. You can eat it for breakfast, lunch, brunch, dinner, midnight snack, mid day snack… basically whenever you wanna stuff your face with salty, spicy, umami goodness. This is super simple to make and comes together very quickly! So let’s get to it!
Ingredients
1 cup chopped up kimchi*
1/8 cup kimchi juice
2-3 cups cooked rice
4 strips of bacon OR 1/2 can of spam diced
1 leek OR 3 scallions sliced
2 Tbs gochujang
1Tbs gochugaru
1 Tbs soy sauce
2 Tsp toasted sesame oil
2 Tsp toasted sesame seeds
Recipe
heat up a skillet and add bacon or 1/2 can of spam (if using spam add in 1 Tbs of a neutral oil)
cook the meat until crispy and delicious the remove from the pan, and drain on a paper towel
in the same pan add in scallion and cook on medium heat for about 3 minutes until translucent
add in kimchi and cook on medium high heat until some pieces get golden around 4-5 minutes
add in gochujang, gochugaru, soy sauce, kimchi juice and sesame oil and cook for about 1-2 minutes
add in rice by crumbling it in your hands straight into the pot
toss together until heated through
SERVING SUGGESTION
My favorite way to eat kimchi fried rice is with an olive oil fried egg on top! It’s very simple. you just heat up two tablespoon of oil until the pan is smoking hot. Drop in an egg and cook until the whites are full set. The edges will get super crispy, crunchy and golden brown. Top your fried rice with the egg, then drizzle toasted sesame oil and toasted sesame seeds on top! It is so, so GOOD.
*ps. you should know my way of cooking kimchi fried rice is a bit different. My rice to kimchi ratio is double most recipes. I really enjoy that sour, salty, bright and complex flavor that kimchi gives; and rice is such a blank canvas I pushed the boundaries of how much I could add. If that’s not your thing feel free to half the amount of kimchi!
