BURGER NIGHT
There are few things I love more than sitting in front of my TV, Netflix on, wine in hand, and a perfectly crafted burger with all the fried sides I want. Pure bliss if you ask me. This recipe, like all of my recipes, is… wait for it… really customizable. I know I know! When we look for a recipe we want. well… a recipe. But cooking is about more than just following recipes. If you want your burger loaded with veggies do that! If you want to skip the vegan aspect and make a chicken burger do that! If you want a low carb burger have one! This is just a base of ideas so YOU can get creative in the kitchen! And I believe in you 🥰 Now let’s get to that “recipe”!
BURGER:
ingredients:
2 sweet potatoes and 1 yam
1 1/2 cups of quinoa cooked
2 Tbs vegan worcestershire
1 Tbs Mesquite seasoning
2 drops (seriously) liquid smoke
1 small onion diced very fine
1 small red bell pepper diced very fine
1 can of black beans (drained)
1 cup breadcrumbs
1/4 cup of flax seed
1 Tbs fresh chopped rosemary
salt and pepp to taste
Recipe
poke some holes in the sweet potatoes and yams and put in the microwave for 15 minutes (these will be very hot! let them cool for at least 5 minutes before handling!)
in a small saucepan heat up some oil and add in the pepper and onion and sauté on medium until very soft and translucent about 5 minutes
combine all ingredients listed above in a food processor and pulse until you get a somewhat chunky (ew?) mixture that can be formed into a patty! (Remember we’re not making a smoothie! We’re making a textured and thick burger! Whole pieces of black beans or quinoa is good!)
Form into burgers and put in the fridge to set up while you get the rest of your burger toppings and sides ready.
After 30 minutes at least heat up a flat griddle or skillet and coat in oil. Add the chilled burgers and cook until you get a delicious char on each side. (For me on medium high it took about 5 minutes per side! But keep an eye in your pan and flip when you have a crispy charred crust on the outside of your burger!)
TOPPINGS
Okay. This is where you can kind of go buck wild. Vegan bacon, Regular bacon, onion, lettuce, tomatoes, purple cabbage, avocado, cheese, mushrooms whatever your heart desires! The sky is the limit!
SAUCES
This is maybe my favorite part. Of course you can do ketchup, mustard, mayo, or BBQ sauce or you can put my two favorite sauces ever
BOURBON BBQ SAUCE:
Combine all of these ingredients in a sauce pan. Bring it to a boil and then reduce your heat to low and let the sauce cook down until THICK!
1 cup of bbq sauce
1/4 bourbon
1 Tbs brown sugar
1 Tbs apple cider vinegar
CHIPOTLE CASHEW CREAM:
Combine all of these ingredients (except water) in a blender and blend until thick and creamy! Use the water to thin out little by little until sauce is the desired consistency!
1 1/2 cups cashews (these need to be soft so soak in hot water for about 30 minutes before doing this)
3 chipotle peppers in adobo sauce
1 Tbs lemon juice
1/4 water
salt and pepp to taste
SERVING SUGGESTION
I served mine with grilled corn, oven fries, tempura fried green beans, onions rings and tons of sauces to dip these goodies in.
