THE BUFFALO BOWL
This bowl is such an easy healthy and delicious lunch I want to eat it everyday. No joke, like every day. Using @hotforfoods buffalo cauliflower I have made a buffalo bowl. All the satisfaction of wings and all the things except piled on top of some good ol’ leafy greens. A drizzle of buffalo sauce and some ranch on top make this just so. so. good!
INGREDIENTS
1 celery stalk sliced
1/2 avocado
1 serving of hot for foods buffalo cauliflower (she has the perfect recipe. I thought best to leave that alone)
1/4 cup finely shredded purple cabbage
1 carrot, peeled and grated
1 sliced radish
1/2 lime
1 pinch of salt
2- 3 cups of spinach or massaged kale
1/2 jalapeno (optional)
1/4 cup cilantro (optional! I know this is a controversial herb)
buffalo sauce + ranch for drizzling
RECIPE
make the buffalo cauliflower in keep warm in the oven on a sheet tray
combine cabbage, lime, and salt and massage (beware this will stain almost anything pink! It’s very pretty and also hard to get out)
plate it up! (salad recipes are always pretty easy)
favorite way to do this is lay my greens down, massage lightly with some lime juice. add in the cilantro next.
then to make things pretty I arrange everything in little sections over the greens. Be sure to squeeze out the juice from the cabbage.
drizzle with ranch and buffalo and EAT EAT EAT.
